Garlic Caesar Salad

Ingredients

1/2 cup olive oil
½ whole garlic clove
2 tablespoon freshly squeezed lemon juice, or to taste
2 cups dried crouton
1/3 cup Parmesan cheese, freshly grated or shredded into paper-thin bits
5 whole anchovy filet or to taste
1 pinch salt
1 whole Romaine lettuce head, washed and dried, cut into pieces, discard any blemished pieces

Preparation

Combine the olive oil and garlic in a blender and blend until smooth and creamy. Add the lemon juice and the pinch of salt.

Pour the dressing into the bottom of a large salad bowl. Add the anchovy and mash it into the dressing until well blended.

Add the romaine, and toss together until the leaves are all coated and shiny. Add the croutons and toss lightly to mix.

Sprinkle the cheese over just before serving.
