Spaghetti with Meat Sauce

Ingredients

2 tbsp butter or olive oil
4 whole onion, thinly sliced
1/2 cup warm water
1 whole red pepper, diced
1 lb ground beef or pork or an equal mixture of both
2 whole garlic clove, minced
56 oz canned whole tomatoes, drained, seeded and chopped
2 tbsp tomato paste
¼ teaspoon dried red pepper flake, optional
1 pinch salt, to taste
1 pinch black pepper, to taste
1 lb spaghetti
1 pinch parmesan cheese, to taste

Preparation

In a large saucepan, heat the butter or oil over moderately high heat. Add the onions and cook until soft, about 5 minutes. Add the water and the red pepper. Increase heat and cook until water has evaporated.

Add the meat and the garlic. Cook over high heat until meat has browned. Add the tomatoes, the tomato paste, and the red pepper flakes, if desired. Reduce heat to moderate and cook, uncovered, until sauce is rich and thickened, about 1-1/2 hours, stirring occasionally. Season with salt and pepper.

In a large amount of boiling, salted water cook the spaghetti until tender, about 7 to 10 minutes. Drain well.

Toss a small amount of the sauce and the pasta in a large bowl. Top with more sauce and Parmesan cheese.
